Over 25 years ago I started working in a restaurant as a part time job. Through the years I've been a manager, food waitress, bartender, cocktail waitress, and staff trainer. I have worked in many nightclubs, bars, restaurants, pubs, diners, a hot dog cart and a "fine dining" restaurant.
I noticed right away that most servers "just got by" on their tip money, while others made GREAT money.
I started collecting tips and techniques from the people that were making the best tip money. Each person had their own little tip. I became interested in collecting the "secrets" that led to bigger tips.
It didn't take long for me to become the highest tipped worker wherever I worked.
I wasn't always the prettiest, slimmest, youngest or cutest, (although I still look DAMN good!). I just found out some simple, little secrets that made my income worth my time. I learned HOW to make exceptional money as a waitress and bartender.
A few years ago an owner saw me counting my tips at the end of a shift. Most owners don't care how much you make. This owner was different.
He wanted me to teach his staff to do as well. He was shocked when he realized his first management offer would mean a CUT in pay for me. He had never had a worker make as much tip money as I did.
We finally agreed he would match my income (plus I got benefits). |

I started sharing a few ideas and "secrets" as I trained new staff. The new staff made better tips than veteran bartenders and waitresses, who had been working for years. Pattis opinions
To make my life simpler, I wrote out a small list of a few techniques to help the new staff. (It made my job much easier as I'm basically lazy!)
The results were AMAZING!
Servers have come back to me time and time again, saying how they are making better tips than all their friends. Some of my trainees that have moved away, or gone to other establishments, have come back and told me they are going home with 2 to 3 times what their co-workers are earning.
I began to realize that my collection of techniques were unique. I realized I probably could sell this specialized information.

Why isn't this information easier to find?
Unfortunately, you know that working in the hospitality industry is generally looked down upon. Everyone and their brother thinks they could be a bartender or a waitress. And maybe they could. What most people don't realize is that a few smart individuals are making LARGE dollars by serving customers.
If you surf the internet, you'll find lots of information on running a hospitality establishment, training workers for management, bookkeeping, kitchen help, etc,. I found a lot of information on "How to be a Bartender". I guess most people never considered that learning how to mix drinks is different than learning how to make large tips.
I found a few "magic" courses that teach you to do tricks like Tom Cruise in Cocktail. In most of the busier places I've worked, this would get you fired. These "tricks" are a great way to impress your friends, but the owner doesn't like you dropping a 40 oz. bottle of rum.

I went to a local community college that offers courses in the hospitality industry. They teach courses on management, marketing, reservation systems, wage/cost pricing analysis, policy and system design implementation. It was all "management" courses. There was nothing on earning bigger tips!
Sometimes the owner/manager has a list of expected duties that they give as so-called "training" to the new waiter/waitress. This "training" is meant to improve the establishments efficiency and profits, not necessarily the workers. I couldn't find any information on improving the front line workers income.
